Medley of Roasted Vegetables ~ Debbie Chaves

Medley of Root Vegetables– 3 lbs assorted root vegetables( carrots, parsnip, new potatoes, turnips) peeled and cut into even size and chunks
8 shallots
1/4 cup extra virgin oil
2 tbsp chopped herbs like thyme, parsley
2sp salt
1sp pepper
place rack in center .Preheat to 400.
2. In large roasting pan toss vegetables and shallots with oil, herbs, salt and pepper.

Roast uncovered stirring once or twice until browned and fork tender about 45 minutes and then serve.

Yummy & hearty!
